Answers to common questions from our customers

Why can't I order the same day?

Our products are made from scratch and prepared in small batches. Sourdough requires a couple days to properly ferment and develop flavor, making same-day ordering impossible. Pre-orders allow us to bake fresh for each pickup day while minimizing waste and maintaining quality.

When do orders close?

Ordering windows typically close two days before bake day to allow time for starter preparation, fermentation, and dough development. Current ordering deadlines are listed with each preorder.

How do pre-orders work?

Orders are placed through our website during open ordering windows. After the ordering window closes, the sourdough starter is built up and prepared for dough day. The following day, the dough is mixed, slowly fermented, and cold-proofed overnight to develop additional flavor. On bake day, each order is prepared, baked fresh, cooled, and readied for pickup.

What forms of payment do you accept?

Available payment methods are displayed during checkout on our website.

When can I pick up my order?

Pickup dates and times are listed when ordering. Customers will receive pickup information with their order confirmation. Please reach out if you have any questions!

Where are you located?

We are a small homestead-based micro bakery located in Alaska's Copper River Basin. Pickup details and the address will be provided after an order is placed.

Because we operate from our homestead and not a retail storefront, we kindly ask that customers do not stop by without a scheduled pickup or prior arrangement. Thank you for respecting our home and family.

What if I miss my pickup time?

Please contact us as soon as possible if you are unable to make your scheduled pickup. We will do our best to work with you, but due to the perishable nature of our products, we cannot guarantee alternate pickup arrangements.

Do you keep Sourdough items in stock?

No. Tundra & Thyme -- Home of Copper River Sourdough operates primarily on a preorder basis. This allows each product to be baked fresh and helps reduce waste.

What ingredients do you use?

Our products are made with simple ingredients, including flour, water, salt, and sourdough starter. Specialty products may include additional ingredients such as cheese, herbs, jalapeños, butter, or other seasonal ingredients.

What makes sourdough different?

Unlike bread made with commercial yeast, sourdough is naturally leavened using a sourdough starter. The slow fermentation process develops the flavor, texture, and character that make sourdough unique.

Many people also find sourdough easier to digest than conventional bread. During fermentation, naturally occurring bacteria and wild yeast help break down some of the compounds found in flour. This process may improve nutrient availability and can make sourdough gentler on digestion for some individuals. However, individual experiences may vary.

Because sourdough is a living product, factors such as temperature, humidity, flour, and even seasonal changes can affect the fermentation process. As a result, each batch may vary slightly in flavor, appearance, and texture. These natural variations are part of what makes handcrafted sourdough unique.

How should I store my bread?

For best results, store bread at room temperature in a bread bag, paper bag, bread box, or wrapped in a clean kitchen towel. Avoid refrigeration, which can cause bread to stale more quickly.

Can I freeze my bread?

Yes. Sourdough freezes very well. For best results, slice before freezing and thaw as needed.

Are your tortillas handmade?

Yes. Our flour tortillas are hand-rolled and made with real butter for a rich flavor and tender texture, then cooked on hot cast iron.

Like our sourdough products, the tortilla dough is prepared ahead of time and cold-proofed to develop flavor before being rolled and cooked fresh. While I may eventually dust off my old tortilla press, for now I prefer to roll each tortilla by hand.

Do you sell fresh eggs?

Yes. Fresh eggs from our homestead flock are occasionally available while supplies last.

What is your return and refund policy?

Due to the perishable nature of our products, we are unable to accept returns.

If there is an issue with your order, please contact us within 24 hours of pickup. We want our customers to be happy with their experience and will work with you to address any concerns.

Orders canceled before the ordering window closes may be eligible for a refund. Once the ordering window has closed and production has begun, refunds cannot be guaranteed.

Are you commercially licensed?

Tundra & Thyme -- Home of Copper River Sourdough operates as a home-based micro bakery in accordance with applicable cottage food and home food production regulations. Our products are prepared in a home kitchen and are not produced in a commercial kitchen unless otherwise noted.
